Preparing the puck

  1. Place the portafilter in the portafilter holding base.
  2. Put the portafilter funnel on top of the portafilter.
  3. Pour the ground coffee out of the dosing cup into the portafilter.
  4. Remove the WDT tool (spiky needle thing) from its holder. Insert it into the portafilter so the needles gently touch the bottom of the portafilter.
  5. Move the WDT tool in small circular loops while simultaneously sweeping the tool in a larger circular revolution around the portafilter.
  6. Repeat this motion a few times, each time raising the level of the needles by a few millimeters away from the base of the portafilter.
  7. When you have reached the top of the pile of grounds, remove the funnel and even out the top layer.
  8. Place the tamper on top of the portafilter and push hard into the countertop to compress the coffee grounds. Then, remove the tamper, wipe the dust off with a towel, and put it away.
